Apricot Meringue

Quick, easy and tasty, this apricot meringue is easily made with ingredients on hand. Try it with other preserved fruit such as peaches and pears.

Ingredients

800 g Apricots, canned
1 cup Biscuit crumbs
70 g Ground almonds
2 tbsp Sweet wine
3 Eggs
½ cup Sugar

Directions

  1. Preheat oven to 150 degC. Drain canned apricots in syrup and reserve ½ cup of the syrup. Place apricots in an ovenproof dish and cover with crumbs and ground almonds. Pour over sweet wine and apricot syrup.
  2. Beat egg (whites) until stiff and then gradually pour in the sugar while continuing to beat until the mixture is glossy.
  3. Pile meringue on top of the fruit and bake for 20 minutes until meringue is golden and firm.
