Miso with pan-fried scallops, nori and coriander
( SERVES 4 )

|2 tbsp||Miso paste, (yellow)|
|½ tbsp||Fish sauce|
|1 sheet||Nori sheet, torn, or 1 cup seaweed pieces|
|100 g||Soba noodles|
|½ tsp||Sesame oil|
|1 handful||Coriander, to garnish|
|1 handful||Spring onion, to garnish|
- Whisk the miso into the water and bring to a simmer in a saucepan. Add the fish sauce. Add the nori and the noodles and let cook for 10 minutes.
- Heat a pan and when hot add the butter and sesame oil. Cook the scallops for 1 minute on each side.
- Ladle the miso into warm bowls. Add the noodles then the scallops, coriander and spring onions. Serve with spoons and chopsticks.
