Ingredients

1 cup Brown lentils, (washed and drained)
1 cup Brown lentils, (washed and drained)
1 Onion, (diced)
1 clove Garlic, (finely chopped)
2 leaves Bay leaves
1 sprig Thyme
1 tbsp Olive oil
80 g Mozzarella cheese, (kaeseri or bocconcini, chopped)
12 Pitted black olives, (finely chopped)

Ingredients

1 Salt & freshly ground pepper
3 Red peppers, (small)
4 Courgettes, (small)
1 Eggplant
3 tbsp Olive oil
250 ml Greek yoghurt
1 Lebanese cucumber, (or a small telegraph)
1 Garlic cloves, (crushed with 1 tsp of salt)
¼ cup Fresh mint, (finely chopped)
