Braised spiced chicken and kumara

|1.6 kg||Chicken thighs, bone in and skin on|
|1 tbsp||Olive oil|
|1 tsp||Chilli flakes|
|1 tsp||Sweet paprika|
|1 tsp||Ground cumin|
|1 tsp||Ground coriander|
|400 g||Kumara, peeled and chopped|
|½ cup||Chicken stock|
|400 g||Chopped tomatoes, (1 can)|
- Preheat oven to 200 degC. Place the chicken, oil, chilli, paprika, cumin and coriander in a bowl and toss to coat.
- Place the chicken mixture, kumara, stock and tomatoes in a baking dish and cook for 35-40 minutes or until the chicken and kumara are cooked through and golden.
* You can use any chicken pieces on the bone for this recipe.
