White bean stew with tomatoes, peas and feta
|800 g||White beans|
|400 g||Canned tomatoes|
|1 tbsp||Tomato paste|
|½ cup||Vegetable stock, or water|
|1 to taste||Salt & freshly ground pepper|
|1 tbsp||Olive oil|
|1 cup||Peas, (frozen)|
|150 g||Feta cheese|
- Preheat oven to 180 degC. Pour the beans (drain cans) into a baking dish. Roughly chop the tomatoes and add with the juice.
- Mix the paste and stock (or water) together and add with the onion(thinly sliced), bay leaves, seasoning and olive oil.
- Bake for 30 minutes then scatter with peas and return to the oven for a further 10 minutes. Crumble over the feta before serving.
