New Potatoes in Butter and Herbs

|2 kg||Baby potatoes, (baby) scrubbed|
|1 handful||Parsley, and mint together, chopped|
|1 to taste||Black pepper, optional|
- Scrub the potatoes well and set in a steamer basket over a pan of boiling water.
- Steam for 12 minutes. Melt the butter in a heavy pan, then add the steamed potatoes and salt. Toss well.
- Place the pan over a very low heat and allow the potatoes to “pot roast” for 30-40 minutes, shaking the pan occasionally.
- To serve, tip the potatoes onto a warmed serving plate and drizzle over the butter and herbs. If necessary, add extra salt
